The Mare aux Oiseaux restaurant has been awarded a Michelin guide star every year since 2000. An immense adventure that we enjoy day after day, by your side, with an unwavering passion and love for what we do.
Our chef, Éric Guérin, who has embraced his adopted region, adds his personal creative touch to local traditional products. Very committed to his producers, he prioritizes short distribution channels and prefers the weever to the over-fished sea bass and the catfish to the pike perch. The chef uses only premium, fresh products that are in season. Respectful of nature, Éric Guérin’s cuisine is delicate, blended, bold, brimming with emotions and poetic! The charming location, and the staff’s kindness, professionalism and openness take care of the rest.

The journey begins in the Salon des cages lounge. Settle in for an aperitif and simply enjoy the moment… and our fireplace in the winter! On to the restaurant, which has a triptych feel, a glass cube dressed with raw silk drapery, a cosy boudoir and conservatory overlooking the garden. Next to the conservatory are, the patio and outdoor lounge to enjoy the warm weather. On the way back, feel free to take a look through the porthole in to the kitchen or just open the door: all respectful guests are very welcome!

The dining room
The interior design has evolved over time with the owner’s passions. The antique furniture will take you back in time while the resolutely contemporary pieces of art, will bring you back to the present. An eclectic setting where souvenirs from Éric Guérin’s travels create a permanent contrast between roots and escape, like an imaginary bridge between heaven and earth.
An instigator and pioneer, the chef has always made firm choices.
No tablecloths, menus on a tablet, the same locally-crafted wooden knife throughout your meal, porcelain tumblers and a number of unique pieces created by an artist… there are plenty of examples. Do not take offence, this is not meant as provocation. On the contrary, we are very keen to give you a warm welcome, while defending the values and philosophy that are dear to us without ever forgetting to cultivate our differences.
Cyril’s wine cellar
Our wine list has been created to respect the work of winemakers and the environment.
For many years, Cyril Carré, our head sommelier, has been selecting wines made using sustainable agriculture more respectful of nature.
With over 300 different wines, giving you the choice between small wines just waiting to be discovered and handpicked labels, our cellar has something for everyone.
Our sommeliers will be happy to advise you or, if you wish, suggest pairings to emphasise and bring out the best of Éric Guérin’s cuisine.
